Black Bean Salsa

This recipe came from a friend I knew in Louisville.  It is the most requested recipe I make. I'm pretty sure my family makes it every summer they get together.  I say "they" because they all live near each other and I have lived far far away for far too long.


Black Bean Salsa


2 cans drained and rinsed black beans
1 can drained corn
2 (14 oz) cans petite diced tomatoes, drain most of juice
1 medium diced red onion
1/4 c chopped cilantro
3 T lime juice
2 T olive oil
1 T red wine vinegar
1 t salt
1/2 t pepper
1 avocado

-Mix all ingredients except avocado together and let set in fridge for 30-ish minutes.  Dice Avocado and add just before serving with yummy yummy tortilla chips, or over burritos, or as a topping to tacos, taquitos or quesadillas, or fish.

Mexican Chicken Bake

I got this recipe from a recipe exchange when I lived in Kentucky. My family LOVES it and we can eat it all up in one meal.

Mexican Chicken Bake

1 can refried beans
2 cups cooked diced chicken
1 small can diced green chilies
1 small onion diced small
1 can red enchilada sauce
2-3 handfuls tortilla chips broken up
1-2 cups shredded cheddar cheese

Layer in a casserole dish and bake 20-30 minutes until hot, its bubbly on the sides and cheese is melted. Serve with favorite taco toppings such as: sour cream, diced tomato, shredded lettuce, salsa and or guacamole.

Dump-it Salsa

This is my quick, I need a fix for my salsa craving. This makes a whole lot of salsa, so you should probably only make it for entertaining or cut it in half.

2 28 oz can's of drained diced tomatoes
1/2 -3/4 of large yellow onion
2 T pickled jalepenos (more may be necessary for level of spice)
1/2 bunch cilantro
3/4 t kosher salt (less if using table salt)
3/4 t garlic powder
1/2-ish t cumin
1/2-ish t oregano
1/4-ish t coriander (optional)

Blend in food processor leaving small chunks. If you only have a blender then don't overblend.
