Chimichurri

I was first introduced to chimichurri sauce from my friend (and come to find out 5th cousin) Randy. He went to Argentina on a mission, I think that is where he first had this.

We love it around here. We've even poured it on top of a hot dog and loved it. Though it does go best on a nice juicy steak or sliced flank steak. He found the recipe on Allrecipes. Though he added cilantro to it, and we like it best that way. Last time we made this, we didn't have any parsley so it was completely cilantro. It was great that way too.

Chimichurri Sauce

1/2 cup Fresh Parsley
1/2 c Cilantro
3/4 cup Olive Oil
3 tablespoon Red Wine Vinegar
2 tablespoon Dried Oregano
2 teaspoon Ground Cumin
1 teaspoon Salt
1/2 Tablespoon minced Garlic
1/2 T Hot Pepper Sauce such as Frank's

Blend altogether in a blender until well combined. Serve over steak of choice.

  1. Randy's recipe is from epicurious.com:
1 cup packed fresh italian parsley
    1/2 cup olive oil
    1/3 cup red wine vinegar
    1/4 cup packed fresh cilantro
    2 garlic cloves peeled
3/4 tsp dried crushed red pepper
    1/2 tsp ground cumin
    1/2 tsp salt

Puree in blender. Serve at room temp. He loves it on brats! Come over and eat some with us! :)
